Have you been to hotel and restaurant management school? That would be a start.
You will need to start by observing the current operation and analyzing the good and bad. If there is a 'system,' you can look it over and decide what you want to keep and throw out. You need to put thoughts on paper and then have a staff meeting. You will present specific responsibilities to each person. Insist on compliance.
Do you have decent chefs? Are goods and equipment organized and clean? I would start everyone off by cleaning things up. You will have to be observant and follow-up. Micros is a decent system and very easy to use.
Basically you just need a stations at each area that form a network. Printers in the Kitchen and Bar areas and screens for the persons placing the orders.
These systems will do everything for you. Keep track of sales, show what are the most popular dishes and drinks, add up the nightly tab, credit card readers, etc.
A good system can basically keep track of all financial transactions and help make the business run smoother.
Is this hypothetical? Because if you took this job and have no clue then that's an issue. This is far too big a question to answer in YA. They must have some systems so you need to analyze what's in place, what is working or isn't and why. And then just one by one break it down and get things fixed. I would love that opportunity, but we can't do it for you while you're getting the salary.
